I have been having a hard time to store leafy vegetables in the fridge for sometime now. Specially, the Coriander and Mint leaves. There are times when i have forgotten about it completely and it goes to trash and which is when i remember what my parents used to say to me, “Do not waste food”.
So, here is my simple trick that i do to store my Coriander and Mint leaves.
Wash them in good water so you don’t have any sand sticking the leaves. Strain them well and add them to the mixer grinder or blender. You can add both Coriander and Mint together or blend them separately. Blend it well along with Olive oil. Keep adding Olive oil to make it into a nice smooth paste. Once done, you may transfer it to a mason jar or any bottle for later use in the fridge.
It stays in the fridge for like about good 3-4 weeks and the best part is i can use it like bread spread or Dip as a side dish for my fried chicken or veggies or even use it to marinate. Isn’t it a good idea 😉 Do try and let me know your views.
